My Mom's Cherry Blinks

She got the way to groove me


1/3 cup shortening
1/2 cup sugar
1 egg
1 1/2 tbsp milk
1/2 tsp vanilla
1 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup pecans, chopped
1 1/2 cup corn flakes/wheaties
candies or maraschino cherries

Preheat oven 400 deg. Mix shortening, sugar, and egg. Stir in milk and vanilla. Blend dry ingredients in separate bowl. Gradually add dry ingredients to wet. Stir in pecans. Put cornflakes in a pie plate or cake pan and roll teaspoonfuls of dough in cornflakes to coat. Place cookie balls 2" apart on greased or parchment lined baking sheet. Top each with half a cherry. Bake 10-12 minutes. Yields: about 3 dozen.
