Best Damn Cornbread West of the Missisppi

Beans and cornbread had a fight


1/4 cup honey
1 cup yogurt or buttermilk
2 eggs
1 cup all purpose flour
1 cup cornmeal
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Put 8 inch cast iron skillet in oven and preheat to 375 degrees. Combine first 3 ingredients in a mixing bowl. In a separate bowl combine the remaining dry ingredients. Add the dry ingredients to the wet and mix it until it's just wet. Remove the hot skillet from the oven and spray with cooking spray or put in a teaspoon of butter and swirl it around until it's melted. Pour in the batter and bake for 25-30 minutes.

Garnish/additions: 1-2 tbsp chopped jalapeno, chopped sundried tomato, crumbled feta, shredded cheddar cheese, crumbled bacon, and/or chopped green onion.
