Black and white and delicious all over

Almost Exactly Like Zaro's Black and White Cookies


Cookies:
1 cup butter
1 3/4 cup sugar
4 eggs
1 cup milk
1/2 tsp vanilla
1 tsp lemon extract
2 1/2 cup cake flour
2 1/4 cup all purpose flour
1 tsp baking powder
3/4 tsp salt

Preheat oven to 375 deg. Cream butter and sugar. Beat in eggs one at a time. Stir in milk, vanilla, and lemon extract. Combine the dry ingredients in a separate bowl. Add the dry ingredients to wet in thirds, incorporating between each addition. Drop 1-1.5 tbsp scoops on greased or parchment lined baking sheet. Bake 11-14 minutes. Cool thoroughly on rack and then ice slightly over half of the flat portion of the cookie with white icing (see below). Let set for 20 minutes. Ice the other half with chocolate (black) icing (see below) and let set for 20 minutes.

Icings:
For the white icing, combine 1/2 tbsp butter, 3/4 tsp vanilla, 1 1/2 cups powdered sugar, and 1 tbsp neutral flavored syrup like corn syrup or agave, even honey could be used. Add boiling water by tablespoons until icing is desired consistency and butter is melted.

For the black icing, follow instructions for white icing but add 1/4 to 1/3 cup Dutch processed cocoa powder or up to an ounce of bittersweet chocolate. Icing may need to be put over a pot of simmering water to melt chocolate and butter.
