Thick & Chunky (Like Your Mom) Tortilla Soup


1 tbsp canola oil
1 cup chopped onions
2 garlic cloves, minced
3 medium sweet potatoes, cubed
3 cups chicken (OR vegetable) broth
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp chili powder
1/4 tsp cayenne pepper
1 14.5 oz can stewed tomatoes
1 cup frozen corn
1 4 oz can chopped green chiles
3 tbsp chopped fresh cilantro (optional)

Saute onions and garlic in oil in a large pot until tender. Add in broth, sweet potatoes, and spices. Bring to a boil; then reduce heat and simmer covered until sweet potatoes are tender. Transfer 2 1/2 cups of sweet potatoes and broth to a blender (or stick blnder cup) and process unitl smooth. Add the puree back to the pot and stir in the tomatoes, corn, and green chiles. Cook until heated through. Serve hot and garnish with tortilla strips and cilantro.
